Woot. Birthday party Sunday, and I'll be smoking brisket. We bought half a steer (grass fed, pasture raised) from our neighbors recently and I have two very nice, marbled slabs in the freezer. Oh man. This is gonna be awesome.

I use the basic Texas recipe. Half kosher salt, half coarse ground black pepper.

For the ribs though I stick to Memphis style. Paprika and chili powder, salt and pepper, a touch of cumin and mustard seed. Maybe sauce, maybe not.

I actually have about 20 pounds of beef ribs... yesssssss.

My neighbor has an older model of this same cooker (no digital thermostat) and did a coffee rubbed prime rib from the same steer a couple of months ago. We played board games and ate about 2 pounds each. No veggies. Just meat and beer. It was glorious.

I reiterate - this is gonna be awesome.

fuck that sounds like my kind of party.

See up here in Maine it is very similar, except for my smoker is a 55 gallon drum sawed in half with a thermometer brazed onto it. And I smoke with the trimmings from my apple tree out back. This is too fancy :)

White cheese works well. Just keep the temp low and it won't melt. I suggest smoked mozzarella.

Nice. I prefer to do it the old fashioned way with charcoal, what made you go electric? I have a Weber Smokey Mountain, and it is a beast. You can see the brisket I did a couple weeks ago here . I will be doing some deer back strap and sausage this weekend, so we should start a Smokerlopnik blog.

Time, mostly. I just don't have enough of it to babysit the smokey old beast (I have an offset style that I mainly use as a plain old grill) now that I have two little kids. Sitting all day on the patio in 110 degree summer heat is not my idea of fun these days, anyway. The Masterbuilt has GREAT reviews from even hardcore smokers, and my neighbor has one (older version of mine) that pumps out some delicious stuff. Now that I have a freezer full of brisket, beef ribs, venison, pork loins, etc. I thought it would be a real easy and practical way to cook it. I'll let you know how it goes!

Awesome. That makes sense, but what you should get so you don't have to sit outside is this . I have it, and it allows me to do other stuff while the bad boy is smoking. It even has alarms you can set, so if you are doing an overnight smoke (like I did with my brisket and pork butts) it will wake you up! I get not wanting to spend all day at home dealing with it though haha. I only use mine on weekends where I know I have nothing going on, or if I'm doing something quick like the deer I will be doing this weekend.
